Cup measure / Beautiful Soft and Fluffy Red Velvet Cake Recipe / Cream Cheese Frosting


 Ingredients

   237ml = 1 cup

   15ml = 1Tbsp

   5ml= 1tsp

● Completed size of the cake

 (16cm * 3cm * 4cm, 5 pieces / or 16cm *16cm *4cm, 1 piece)

● Beautiful red velvet cake

(Mold size: 18cm*18cm)

3 Egg 

80 g sugar (1/3 cup + 1 Tbsp) 

A pinch of salt

5 ml vanilla extract (1 tsp) 

10 g Honey (1/2 Tbsp) 

75 g cake flour (1/2 cup) 

5 g  cocoa powder (1 tsp)

15g  red rice flour (1 Tbsp + 1/2 Tbsp)

-- (85g cake flour + 10g cocoa powder + red food coloring) - Without red rice flour

35 g milk (2 Tbsp + 1 tsp)

30 g  unsalted butter (2 Tbsp)

Food coloring (red color)

♥ Cream cheese frosting

180 g  cream cheese (3/4 cup + 2 tablespoons)

35 g sugar (3 tablespoons) 

10 g lemon juice (2 teaspoons) 

3ml vanilla extract

235 g heavy cream  (1 cup) (35% milk fat )

● Coffee syrup

50 g water (3 tablespoons + 1 teaspoon)

30 g sugar (2 tablespoons + 1 tsp)

5 ml kahlua or rum (1 tsp) 

How to make ㅡㅡㅡ ㅡㅡ

1. Weigh water and sugar

2. Melt the sugar in the microwave and...

3. Mix in kahlua or rum and cool to room temperature.

● Red Mirror Glaze

57 g  water (4 Tbsp)

60 g sugar (4 Tbsp + 2 tsp)

90g starch syrup (1/2 cup + 1 tsp) or Glucose

50 g sweetened condensed milk (3 Tbsp + 1 tsp)

7 g  powdered gelatin (1 Tbsp)

+ 35g  water (2Tbsp + 1tsp)

25 g milk chocolate (1 Tbsp +1 tsp)

70 g white chocolate (1/3 cup + 1 Tbsp)
